Delicious Vegan Lactation Cookie Recipe

 

Lactation cookies were no joke one of my favorite parts of breastfeeding. you mean I get to nourish my baby while nourishing my body with cookies?? Yes, please!

 

These cookies aren't going to drastically enhance your milk supply. Which is good, because that's not something most mamas need. And if you do feel like you need help with supply, then be sure to talk to a lactation consultant to get the one-on-one support you need. 

 

What these cookies will do is provide you with healthy, dense calories that assist your body in producing the milk your babe needs.

 

They're made with ground oats, flax seed, coconut oil, nutritional or brewer's yeast, coconut sugar & dark chocolate. Yum yum yum! Perfect for that late night nursing snack or whenever you need something quick, delicious and easy,

 

Also - keep drinking that red raspberry leaf tea that you had during pregnancy. Red raspberry leaf "can help increase breast milk supply, help the uterus return to pre-pregnancy size and help reduce postpartum depression." Another yes, please!

 

So, go make yourself a cup of RRL tea & eat a delicious cookie to go with it. (Or better yet, have a loved one do it for you.) Take several deep breaths, feel nourished, and enjoy.

Vegan Lactation Cookies

  • 2 cups oats
  • 4 tbsp ground flax seeds
  • 1/2 cup water
  • 1 cup coconut sugar (I cut this in half)
  • 1/4 cup brewers OR nutritional yeast (I've always used nutritional yeast!)
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup oats
  • 2/3 cup dark chocolate chips
  • 6 tbsp coconut oil

 

Preheat oven to 350 degrees.

Grind up the 2c oats (save for later).

Combine flax seeds & water.

Add coconut oil, coconut sugar, yeast, vanilla, baking soda & salt.

Mix well.

Gradually fold in the ground oats.

Then add chocolate chips and 1/2 cup non ground oats.

Put spoonfulls of dough on parchment paper

BAKE 10-12 minutes. YUM!
